Quick'N'Easy Wednesday Recipe: Crispy Chilli Prawns That Melt In Your Mouth

This recipe is a really great one to have in the back pocket if you ever end up stuck in for the night and want a nice bit of something to snack on with a beer or two!

These crunchy, crispy and completely delicious prawns will impress any guest who comes through the door. Easy to put together and easy on the pocket too – as you just use a bit of leftover bread to crumb the prawns. If you use frozen prawns (which let's face it, we're students so we will) make sure to let them defrost before going ahead with this little star of a recipe.

Baked Prawns with a Sweet & Spicy Dip – Serves 3 to 4

Ingredients

  • 1 kg uncooked prawns
  • 80 g flour
  • 1 – 2 eggs (whisked)
  • 80 g panko breadcrumbs
  • 1 tbsp oil
  • 160 ml honey
  • 4 tsp lime juice
  • 2 tsp soy sauce
  • 1 tsp grated ginger
  • 1 – 2 tsp red chili (optional)
  • lots of beer

Method

  1. Have a sip of your beer while preheating the oven to 180°C/ 350°F/ gas mark 4. Grease a baking tray for the prawns.
  2. To breadcrumb the prawns, add the flour, egg and breadcrumbs to three separate dishes. Coat each of the prawns in the flour, followed by the egg and finally the breadcrumbs before transferring to the baking tray.
  3. Place the baking tray in the oven and leave to cook for ten minutes. Sip beer continuously.
  4. While the prawns are cooking, prepare the dipping sauce (for the food, not any body parts). Combine the honey, lime juice, soy sauce, ginger and chili in a saucepan over low heat and stir for two minutes until the sauce is heated through.
  5. After ten minutes, remove the tray from the and turn the prawns over on to the other side so that they crisp up nice and evenly. Return to the oven to cook for a further 7 – 8 minutes. Don't neglect your beer during this time
  6. When you're ready to serve up, transfer the prawns to a dish and present them to your guests (or yourself) along with the beautifully sweet, yet spicy dipping sauce.
