Recipe: How To Make Comforting Chicken Soup That Will Cure Those Exam Blues

How to make chicken soup you ask? It's always great to have that warm cozy feeling when you're sick, hungover, stressed or away from home. Chicken soup "for the soul" isn't a saying for any aul reason! Here's our chicken soup recipe:

What you'll need:

  • 1 tablespoon of olive oil
  • 2 onions chopped
  • 3 medium chopped carrots
  • 1 tablespoon of chopped thyme
  • 1.4 litres of chicken stock
  • 300g of leftover roast chicken shredded and skin removed
  • 200g of frozen peas
  • 3 tablespoons of Greek yogurt
  • 1 garlic clove crushed
  • a squeeze of lemon juice

Directions:

  1. Heat oil in a large pan. Add onions, carrots, and thyme then fry for 15 mins.
  2. Make your chicken stock by using two to three stock cubes and add 1.4 litres of water to the stock.
  3. Stir in the stock to the pan and bring the pot to a boil, pop the lid on and then simmer for 10 mins.
  4. Add the chicken to the pot and then remove half the mixture from the pot and purée with a stick blender.
  5. Tip back the puréed mixture into the pan with the rest of the soup, peas, and seasoning, then simmer for 5 mins until hot through.
  6. Mix the greek yogurt, garlic, and lemon juice, swirl into the soup in bowls, then serve. Season with salt and pepper if it's needed.
