Recipe: Healthy Taco Fries That You Won't Feel Guilty About

It's 12.30 am and you see your local chipper in the distance. You've had a few pints and you know what you need -that mince with bittersweet sauce, topped with delicious cheese. You lose your senses and pop your last bit of change onto the counter. After you've devoured the lot you're left with a sad feeling - that wasn't the healthiest, was it? Here's a much healthier alternative:

What you'll need (Serves 2):

  • 500g lean mince (5% mince)
  • 2 tablespoons of tomato puree
  • Fry lite
  • Beef stock
  • 1 red onion
  • 2 peppers
  • 4-5 large rooster potatoes or 2 sweet potatoes
  • 1-2 tsp garlic powder or 2 cloves of garlic
  • 2 cups of grated cheese

Taco Sauce:

6 tablespoons of extra light Mayo

4 tablespoons of ketchup

Half a tablespoon of mustard

Directions:

1.Chop up your potatoes into chips. Boil the chips in water for 5 minutes to soften them and drain the water from the pot. Dry the chips with kitchen paper.  Preheat the oven to 180 c. Pop the chips on a tray and coat them in fry lite. Add 2 tablespoons of paprika, a pinch of salt and pepper to the chips to give them that extra kick after you add the fry lite. Cook the chips for 30 mins or until golden brown and crispy.

2. Fry off the onion, garlic & peppers with the fry lite. Add your lean mince and once it’s browned add the jalapeños (optional) and 1/2 cup of beef stock and simmer for 10-12 mins until cooked through.

3. If you want a spicier dish then add a tablespoon of chili-flakes to the mince as it cooks. Add the tomato purée and simmer for another 5 mins on a low heat.

4. Once your oven chips are ready to go, spoon the meat mixture on top of the chips and add a sprinkle of cheese. Add a dollop of your taco sauce on top. Enjoy!
