Quick 'N' Easy Recipe Of The Week: Completely Baked Brunch

Take getting baked to a whole new level with this recipe - baked beans,  baked eggs, baked breakfast... it's all good! This is such a deliciously satisfying dish which can served as either breakfast, brunch or lunch. The possibilities are endless. Take your baked bean breakfast to a whole new level and spruce it up with some of the best breakfast bits that there are - black pudding and bacon - deeeeeelish! Sure it takes a little longer to make than a normal breakfast but you've got time, and if you don't, well then you better make it because this dish is so worth it.

Baked Eggs - Serves 2

1 tin of beans

2 eggs

100 g black pudding (chopped)

4 bacon rashers (chopped)

1/2 onion

Method

1. Preheat the oven to 200°C and place a small frying pan over a low – medium heat.

2. Chop the onion and add to the pan with the oil and cook until it has softened a little.

3. Add the black pudding and rashers and allow to cook for 2 – 3 minutes before adding the beans.

4. Remove from the heat and give it a good mix so the pudding and bacon is mixed evenly through the beans.

5. Make two little wells in the mixture using a spoon and crack each of your eggs into the well.

6. Season the eggs with a pinch of salt and pepper before placing a lid on the pan.

7. Add to the oven and allow to cook for 8 – 10 minutes depending on how you like your eggs.

8. Serve up your baked breakfast with some toast and get ready to tuck in!
