BBQ Pulled Mushroom Burgers – Serves 4
- 500 g mushrooms (sliced finely)
- 1/2 red onion (sliced)
- 2 garlic cloves (minced)
- 5 – 6 tbsp BBQ sauce
- 400g slaw
- 4 burger buns
- salt and pepper
- 1 – 2 tsp oil
Place a large pan on a medium low to heat. When the pan is hot, add the oil.
Add the onions and mushrooms and gently fry until nice and soft, around 7 – 8 minutes.
Add in the BBQ sauce, mix it through the mushrooms and heat so that it is warmed.
In the meantime, toast the burger buns so they are nice and crisp.
Spoon on a generous helping of the slaw, followed by the mushrooms and top it off with the burger bun before serving up to your adoring diners.
