Ireland's First Ever Prosecco Festival Is Coming Soon

This Summer we are spoilt for choice, in the pipeline, there are wine and cheese festivals to celebrate the delightful combination, a weekend solely dedicated to the wonder that is Buckfast and more Gin festivals than I've had hot dinners. One drink that is seemingly overlooked time and time again is Processo. That is up until now. Cork will host Ireland's first ever Processo Festival, we'll toast to that.


The Processo Festival will take place throughout the month of May and will host a variety of different workshops, masterclasses and events across The Metropole Hotel, Cork International Hotel and The Bluehaven Kinsale.

If you have always wanted to know the secret to making the perfect Processo cocktail, then a Prosecco Cocktail Masterclass hosted by in-house mixologists will be right up your street. You will learn all the tips and tricks of the trade along with how to make four uniques cocktails

Bakewell Fizz

Kirsch soaked cherry, dash of Kirsch Liqueur, Topped with One-part Disaronno, Blueberries, sprig of rosemary, topped with prosecco


French 77 Prosecco

One-part elderflower cordial, one-part lemon juice, one-part gin, Top with prosecco Mint leaf, Lemon Twist for Garnish

MacCurtain Sweet

Our in house made prosecco & mandarin cordial is a sweet and buttery blend of prosecco & baby mandarins, stirred with grain vodka, fresh lime juice topped with soda water and grenadine.


Whole milk is combined with gin, port and oleo saccharum and filtered over time, once again stirred with gin, topped with soda, prosecco garnished with a sage leaf.
